GOLDEN FRAGRANCE MANTIS PRAWN

Ingredients:

  1. 1 pack of MySeafoodMart mantis prawn (defrosted)
  2. 100g dried prawns, soaked in water for 10 mins
  3. 2 tbsp chopped garlic
  4. 8 shallots, chopped
  5. 2 tablespoons cooking oil
  6. 1/2 bowl curry leaves
  7. 6 bird’s eye chillies (cili padi), chopped
  8. 3 tbsp oil

Seasoning:

  1. 3 tbsp oyster sauce
  2. 1 tbsp light soy sauce
  3. 1 tsp sugar
  4. 1/2 tsp little dark soy sauce

Frying Batter:

  1. 1/2 cup water
  2. 2 oz. all-purpose flour
  3. 1 oz. corn starch
  4. 1/2 teaspoon baking soda
  5. 1/2 egg
  6. 1 teaspoon cooking oil
  7. 1 small pinch of salt

Method:

  1. Mix frying batter, dip mantis prawn into frying batter & deep fry until golden brown.
  2. Heat 3 tbsp oil and saute the dried prawns, chopped garlic and shallots until very fragrant.
  3. Add in curry leaves and chopped chillies, all the seasoning and stir fry until aromatic.
  4. Toss in fried mantis prawn into sauce & serve.
